Crustless Asparagus Quiche

Although we’re now in Summer, asparagus are still well and truly out and about (or as we say in our Scottish household “oot and aboot”). I am a massive fan of asparagus and would go so far as to say, they’re on of my favourite veggies. Even more so now! I was lucky enough to get sent a mega box of asparagus a little while ago from the Australian Asparagus Council…..yes, there’s a council, and although brimming with ideas, I wanted to share with you all a very simple, and quick recipe that can be done on a weeknight once home from work. Who doesn’t love a quick and easy recipe right? Crustless Asparagus Quiche Serves 4 Ingredients 1 cup soy milk (can use regular if you like) 2tbs butter 8 eggs 2 cups peas 100g goats cheese 2 Bunches asparagus spears (woody ends removed) Salt & Pepper to taste...

Mushroom and Goats Cheese Tart

I cant believe its less than a week until Christmas 😀 ZOMG!!!!! All of our pressies are under the tree, the dessert list has been made for the family get together, Bonnies reindeer outfit has been bought (although I dont think she’s a fan :(), the last thing to do is our Christmas lunch menu :o….. I know I bang on about mushrooms a lot, probably even more so since Kev and I removed meat from our diet! But they’re so good for you, low in calories (win!!!), mega tasty AND versatile! Just looking back at all my mushrooms posts – Mushroom brioche pull-apart, Porcini gnocchi, Veg stir-fry, Mushroom baklava, Japanese mushroom risotto,  Antipasto cob, the list goes on really – and those are just the ones I have posted about! The awesome peeps at The Australian Mushroom Growers have asked me again this year, to come up with...

Marinated Tofu with Pineapple and Quinoa

So I have a bit of an announcement. Actually, some would call this announcement huge, some have scoffed and mocked, some have been supportive and suggested helpful tips. Its one of those announcements that really splits the room. Quite possibly more so than politics! As of yesterday, Stud and I have been vegetarian for a month 🙂 Well pescetarian. Well kind of. Its a little grey. As a lifestyle change, Stud and I have decided to forgo meat for a vegetarian diet however occasionally we dabble in some seafood. I thought it best to celebrate the milestone with the tofu dish that changes Stud’s mind. Prior to said dish, Stud would turn his nose up at anything tofu, no liking the texture, flavour, or smell of tofu. So yeah basically everything about it. But you know, when one makes such a drastic life change, something’s gotta give. Armed with...

Cumulus Inc – Melbourne

A few months back I went on a girl’s weekend to Melbourne. If I was to live anywhere else in Australia, it would be Melbourne. I absolutely adore it. It has never let me down. Be it shopping, food or festivals, Melbourne does it all, and does it damn well! This weekend was no different. We spent obscene reasonably large amounts of money shopping (most of mine were sales so I didn’t feel so bad ;)), ate like we had starved ourselves for the trip, and caught up with some awesome Melbourne peeps. The stand out for me, for the entire long weekend of eating, was breakfast. I know right? Who even counts brekkie really? It’s just sustenance to fuel us for more shopping! But on our very first day in Melbourne, we headed to Cumulus Inc. on Flinders Lane, and I have been talking about it ever since....

Mushroom Brioche Pull-Apart

Mushroom Brioche Pull-Apart

I adore mushrooms. If you hadn’t noticed by the endless mushroom recipe supply on the blog lol! They’re great in almost everything and are also perfect on their own, on a bit of toast, seasoned with salt and pepper. Actually, they’re perfect on bread in general, but the naughtiest of all the breads has to be brioche. All that butter! It makes me happy just thinking of it 😉 and its surprisingly easy to make. With my obsession for mushroom and a brioche recipe I was dying to try, I decided to combine the two and come up with a mushroom brioche pull-apart. Something to have with a saucy pasta dish. Or any saucy dish for that matter. It mops up perfectly and the mushrooms add a great earthiness to the buttery richness. Brioche Mushroom pull-apart Ingredients 8g sachet dried yeast 1 tbsp lukewarm water 55g caster sugar 3/4...

Porcini gnocchi with asparagus, peas and artichoke hearts – and a COMPETITION!

Drumroll peeps!!!! Thanks to my great friends over at Kitchenware Direct, Dining with a Stud has its very first competition 😀 more on that later. Growing up in a multi-cultural area as an anglo kid, you’re exposed to a mecca of different cultures, people, and of course food. “The hood” as my friends and I affectionately call it, isn’t like your predominantly Italian Leichhardt, or Asian influenced Cabramatta, it’s like a melting pot, and it was great to be a part of. I think the area I grew up in definitely influences my vast love for all different types of food. Although I would say Japanese is my favourite (developed later in life), I could literally eat any type of food and be pretty chuffed with it. With quite a few friends from European backgrounds, Italian is probably my go-to food when we’re at home. I’m familiar with the...
