So I’m slightly delayed with this post. Prepare to feel the wrath of my backlog as I try and catch up on the 100 posts and 5 billions photos that I need to express with you fine people. This post takes part in early December (last year – I’m not THAT bad) and the big weekend that was my hens. First, let me apologise for the photos, DSLR + small clutch = wardrobe malfunction. Hence small Sony P&S was brought along for the day. Anywho, my tres fab MOH had organised a foodie tour (she knows me well) around Sydney. I got to choose between either cheese and wine, or chocolate followed by cocktails. On the eve of new years, I thought it might be appropriate for a quick and easy recipe, and a little look back at the year that was 2011. First up, a quick and impressive recipe for salted caramels that I used to make special Christmas treats for family and friends.  Unfortunately, I didn’t actually take any “proper” photos of these and the last I had was the Instagram of the final unwrapped product, but you get the gist 😉 Salted caramels Adapted from epicurious Ingredients 1 cup thickened cream 5 tablespoons butter, cut into pieces 1 teaspoon sea salt flakes 1 1/2 cups caster sugar 1/4 cup glucose 1/4 cup water Method Line bottom and sides of an 8-inch square baking pan with non stick baking paper, then lightly oil paper. I’m a massive brownie fan. I’m mean really, who doesn’t love a good brownie? I prefer mine a little on the underdone side so its just gooey innards with that crisp outer coating. Oh wow I’m drooling on my computer thinking about it. Anyway, these are just that, with a few different touches added to the original recipe like white chocolate buttons and a can of dulce de leche for good measure. I mean come one, if you are going to go to the trouble of making such a calorific dessert, then you need to jump in b@lls deep and do it right! Who doesn’t love a good tart? Having done a couple of other tarts before and conquered my constant bickering with pastry, I was pretty comfortable with tarts now and wanted to try a few different ones. I’ve done lemon, chocolate, snickers, you know, all the important food groups, but had never tried a frangipane tart and after a purchase of some pears that were basically just for show in our fruit bowl, I knew just what to do with them. I wasn’t actually paying attention to the recipe when I made this and baked the tart first. You are meant to bake it all together. In hindsight, this wasn’t such a bad this as my biggest fear is undercooked pastry and it turned out pretty good if I do say so myself. Von and I have been going somewhat crazy with the cooking courses lately. What with the Brasserie Bread course and the 5 others we have bought online (and not completed yet haha) with those daily deals I’m addicted to, we have definitely been keeping ourselves busy. This course was for beginners wanting to learn how to decorate cupcakes. Now admittedly, I’m not a huge lover of fondant. I appreciate how it can create beautiful masterpieces (or somewhat ok birthday cakes) and love the technique involved in forming fondant in to art, I’m just not a fan of its flavour. I’m a buttercream girl through and through. Just ask every baker in Sydney who we’ve been to see about a wedding cake 😉 we’re slightly picky haha.
