There are very few food items that Stud and I come to a complete disagreement over. The Daring Kitchen has decided that the month of October, would be that time. Every time we go out for Greek or Lebanese, my eyes scour the menu for stuffed vine leaves (dolmades or dolma, depending one where you go) and although Stud would rather poke himself in the eye with his fork than eat them, I have a slight obsession with these little parcels. It’s not such a bad thing that he doesn’t like them – it means more for me right? So when I looked up this months challenge, I was over the moon as I had been meaning to make them for such a long time! This months challenge was an interesting one. Food preservation. The challenge was to make apple butter or “bruschetta in a jar” and successfully jar it to preserve in the cupboard. Basically how its done is you make your mixture (whatever that may be) and place it in sterilised jars. Heat the jars up to boil for about 20 minutes and the air gets pushed out until the lid pops – the popping sound is the lid sucking back in to let you know its ready – and there you have your jar ready to be stored away for a rainy day Ingredients 1.6kg roma tomatoes, washed, seeded and chopped 5 garlic cloves 250ml dry white wine 250ml white wine vinegar 30ml balsamic vinegar 2tbs sugar 2tbs dried basil 2tbs dried oregano Method Place 3 jars on a rack in a pot of boiling water; cover jars with water and...

This month I became a member of the Darking Kitchen http://thedaringkitchen.com/ . It’s a great website where people can swap food stories, good or bad, and post pics of their food journeys. You can choose to be a “Daring Cook” or a “Daring Baker” or both which is what I did. I love to cook everything and figured it would be a great challenge to make things I wouldn’t normally make and to get great all round advice from people who have. Every month the members are sent a challenge and are given strict guidelines to each challenge surrounding the ingredients, method and sometimes preservation. As I joined mid month, I was able to view the August challenge – Pierogi. Something I have never made and actually never heard of before. After some time on Google, I discovered they were basically dumplings that very much resemble ravioli. The guidelines...
