In an attempt to eat healthier, I went on the lookout for a low calorie granola recipe. There were bits of some I liked but then also bits I didn’t so after searching through a lot of recipes, I decided to come up with one of my own. A mixture of things I would like to see added to my granola, and also things I just happened to have in the cupboard at the time. I call it, Granola a La Studd! Original, catchy, I like it. Ingredients 2 cups oats (not instant) ¼ cup brown sugar 1/3 cup apple juice 1/3 cup honey 1/3 cup chia seeds ½ cup slivered almonds ¼ cup coconut ¼ cup dried apricots 1 tsp vanilla essence 1tbs olive oil Method Preheat oven to 180°. One of the good things about working in the Finance industry is Bank Holiday. It’s that little extra picnic day that we get over all others. It’s a day where things are still open, majority of others are at work, and there’s no need to brave regular public holiday crowds. In saying this, I spent my Bank Holiday in the kitchen. All day. I use to love pies as a child. They were a great quick meal for lunch or dinner with the family and even though mum did them in the microwave (hence no flaky crust), I was a massive fan. Then one day, I bit in to my regular fourandtwenty pie and as I was chewing on the mincey filling, I thought of a cow and couldn’t finish it. True story. Don’t ask my logic, I still ate steaks, regular minced dishes (bolognaise, etc) but from that day forward, pies never passed my lips and I became devoted to sausage rolls. It took about six or seven years to pluck up the courage for my to try another pie and once I did, I had no idea what my problem was. As you may or may not know, my mum doesn’t like chilli. Actually, I never use to like chilli either. Even now I’m a little scared of it, but I’ve built up my tolerance over the years and can deal with a little stronger than medium heat as long as I either have a glass or milk, or a glass of wine With my recent curry success (link) (if I do say so myself), I wanted to try another curry recipe for mothers day dinner at our place and seeing as mum isn’t a chilli fan, I thought butter chicken was the way to go. I’m a procrastinator. Stud will attest to this. It’s not even my (or his) opinion. It’s a full blown, honest fact! I put off cleaning, important duties (you know, bills, etc), making things (well in honesty, I don’t put them off, it’s more bursts really. So I do, do it, but only when I am in the mood and then can go months before finishing it hence we have lots of little unfinished crafty bollocks all over the house), you know, anything that isn’t as fun as cooking and I can think of a good reason. On a trip to Sydney Markets with dad, I bought some whole squid. I had always wanted to try prepping a squid after seeing it numerous times on TV and in my books but never actually performed the spine chilling procedure myself. I am always worried that these things that look simple enough on TV (and YouTube) will be a bit of a mission in reality done by a very green home cook but was surprised at how simple it was. Ok I broke the ink sack but it seemed to be broken before I got there. Now I know that sounds like a ‘dog ate my homework’ excuse but it’s true! Am I crazy enough to make my own wedding cake? No! Stud begs to differ. I have mentioned to him that after watching many a program on Lifestyle Food, even the best of bakers won’t make their own wedding cake as it’s just too stressful. Please don’t misunderstand me and think I put myself up there with the best of bakers, or even good ones! I like to bake, I like to cook, anything that involves food, and I’m pretty much a fan. Growing up I never ate curry. We were a meat and three veg type family and as mum wasn’t a massive fan of cooking, we usually only ate things that were quick and easy to prepare. It should also be noted that neither myself nor mum liked chilli so my poor father who is a chilli fanatic, missed out. Later in life I have developed a stronger palette and although I’m not a blow your head off chilli fan, I do like something with a bit of a kick so can pretty much aim for a medium curry. Iv made a few curries at home with those Patak’s jars but always wanted to make my own. There are a few things I miss from my childhood – not having to go to work, eating what I want and it not going to my hips, bubble-o-bills, trips to the Gong with the fam, not having to work (did I mention that?) and my mums zucchini slice. It wasn’t a grand meal but it was pretty awesome and reminds me of her. It has been passed down from my grandmother so who knows where it came from originally?? Recently I got mum to email me over the recipe and on our trip to the markets, dad and I went halves in a big box of zucchini so I decided to give it a go but of course I had to tweak it slightly to make it my own. It is with slight shame and embarrassment that I confess to never having cooked with fresh figs before. Iv never even bought them! I have made a biscotti recipe for my grandfather (who is diabetic) and included dried figs, but never fresh. So when I walked past a fruit stand on George Street I knew this was my time. They sat on the bench for a couple of days while I pondered over how to use them and had actually thought of using them on a pizza but once I mentioned pizza, Stud immediately asked for a Mexicana or something similar so I knew my dainty figs had no chance. I decided to do an Entrée of sorts before the pizza and stuff them with blue cheese then wrap them with prosciutto. This couldn’t be easier to do!
