Chocolate Whoopie Pies with Peanut Butter Cream

So what did you guys do this Valentine’s Day? Me? I made whoopie.

Get your mind out of the gutter! Ay? No! Well, maybe, but that’s none of your beeswax!! ;) teehee

No, what I meant was, I tried my hands at whoopie pies and hey, they were a hit!

When the “Love at First Bite” gauntlet was thrown for February’s Sweet Adventures blog hop challenge, I had a billion recipes running through my mind. Narrowing down those recipes to something I hadn’t tried before, and something that was really special to me and my new husband, I had a pretty tough decision to make. So like any food blogger who cant choose between two dishes, I took the only road I could, and did both. This post however, contains only one of those recipes (stay tuned for the other later in the month).

A quick welcome and thank you to those returning and also the new food bloggers who are partaking in this months Sweet Adventures Blog Hop. We wouldn’t be doing this without you and are very grateful that there’s been such a fab response. Unfortunately, I wasn’t able to partake last month but we had a massive 49 people last months and for a hop that only started 4 months ago, we’re pretty impressed with the ever growing numbers. I cant wait to see what everyone comes up with this month :)

Stud and I don’t really eat too much dessert at home. There’s only two of us so if I make a cake or anything, we’re eating it for days so I normally save my baking for when we have friends over. Thankfully, with recipes in mind, we actually had a Valentine’s Day bake off at work so it was perfect timing to bake, save a couple of slices and palm the rest off to my coworkers – who by the way, love my baking but are complaining that I’m going to make them fat haha.

So anyway, Whoopie pies! While we (Australia) went through the cupcake faze and then the macaron faze, America went from cupcakes to Whoopie pies. They’re basically two rounds of cookie like cake that’s sandwiched together with your favourite filling. My favourite filling (or topping, or base, or cake, or….anything really) is peanut butter. As you guys will know from my previous SABH for the humble pav, I’m obsessed with all things Reese’s so once I had my Whoopie Pie Maker, it was pretty much a given that there would be chocolate, and there would be peanut butter. It’s just how I roll.

Chocolate Whoopie Pies

Adapted from Sweet Treats

Ingredients
250g plain flour
70g coco powder
1 1/4 tsp bicarb
1/2 tsp salt
100 butter, softened
160g brown sugar
1 XL egg
1 tsp vanilla extract
300ml buttermilk
200g milk choc chips
Canola oil spray

Method

Whisk together the flour, cocoa, bicarb and salt into a bowl.

In a separate bowl in the stand mixer, cream together the butter and sugar until pale and fluffy. Scrape down the sides and add the egg. Mix well.

Add the vanilla and 250ml of buttermilk, beating until well combined. Slowly add half of the dry mixture, mix until just combined, then add the remaining half of the dry ingredients. Add the remainder of the buttermilk if its a little stiff (mine was).

If using the whoopie pie maker: Preheat whoopie pie maker and when green light is on, spray lightly with canola oil.  Add a heaped tsp of the mixture in each mould and place down lid for 5-7 minutes or until springs back when touched. Remove whoopie pies and place on a wire rack, repeating the process until all of the batter has been used.

If using an oven: Preheat oven to 180°. Prepare a baking tray with non-stick paper and using a round cookie cutter (around 8cm-ish), trace out circles about an inch apart until the tray is full. Place a heaped tsp of batter inside each traced circle and place in the oven for around 10-12 minutes or until springs back when touched. Remove whoopie pies and place on a wire rack, repeating the process until all of the batter has been used.

Peanut butter cream

Ingredients
1 cup crunchy peanut butter
1 cup thickened cream
2tbs icing sugar

Method

Using an electric mixer, beat peanut butter until soft. Gradually add cream and beat until creamy. Add icing sugar to taste and beat until no longer grainy.

Spread peanutbutter cream on the underside of a whoopie pie and sandwich together with another pie. Repeat until all pies have been sandwiched. You may lick the rest of the bowl of buttercream ;)
